After that Buy Two Free One debacle, I found myself having too much bacon strips. What am I talking about? There’s no such thing as too much bacon strips! What I mean is that I can use them generously. So I did.
I wrapped one sweet potato in foil. Then I wrapped a couple of lemon juice/salt/pepper marinated pollock fillets with bacon strips and wrapped the whole thing in another foil. Then I whacked them all in the oven for 30 minutes. Then I peeled the skins off the sweet potato because I don’t do sweet potato skin.
And that was dinner. Delicioso!
